A Valentines Day Feast for 2 or MORE!


Impress your mate/date for Valentines Day with a few simple but scrumptious dishes-just for 2 for VALENTINES DAY!   IF unattached-read on how to use the recipes on Sunday night-how to feast and have fun!

Your Main course is Steak Diane-herb seasoned ribeyes-made fast and easy!  Make ordinary baked potatoes sizzle with some herbs-and toss your favorite salad and grab a bottle of a good bottle of Chablis or Burgundy wine!  Last but not least-serve up chocolate covered strawberries-freshly made!  This meal is fit for a KING (*and his Queen)-or ANYONE!





Steak Diane for 2:

Ingredients:

* 2 tablespoons butter
* 1 clove garlic
* 2 rib-eye steaks
* 1/4 teaspoon salt
* dash pepper
* 1 tablespoon fresh minced parsley
* 1 tablespoon minced chives
* 1 1/2 teaspoons Worcestershire sauce

Preparation:
In a large skillet over medium low heat, melt butter; sauté the sliced garlic, but do not brown. Remove garlic with slotted spoon. Add steaks; lightly brown on both sides, about 3 to 4 minutes, or to desired doneness. Remove steaks to a serving platter; sprinkle with salt and pepper. Add parsley, chives, and Worcester sauce into the pan drippings; stir and heat through. Pour juices over steaks.
Serves 2.

Jacket Potatoes

4 very large new potatoes, or Idaho potatoes
1/4 cup olive oil
sea salt & fresh-cracked pepper
Any Desired Toppings: Sour cream, cheese, chili, chives, bacon, diced ham, broccoli, cheese sauce, etc.

Wash the potatoes, scrubbing skins well and drying them completely before beginning. Use a sharp knife to cut a cross  shape in the top of the potato.  The cuts should extend to the center of the potato, but not go all the way through and slice the potato in half.  Drizzle olive oil generously atop each potato.  Rub it all over the potato with your hands.  If desired, rub a small amount of sea salt and fresh-ground pepper into the potato skin.  Place in a large baking dish and bake in an oven preheated to 400 degrees for 90 minutes.  Remove and allow to cool slightly before topping with preferred toppings and serving.

Side Salad


Make your own favorite salad (if you don't KNOW what 'greens' your date/mate likes in salads-less is more-keep it simple!*

Be creative-try mixing different greens such as spinach, romaine lettuce, broccoli, olives, cherry tomatos, pre-sliced mushrooms,a gourmet cheese and a rich red-wine vinegarette dressing or choose your fav!  Just keep it simple and colorful-but red wine dressings are good-or buy a bottle and mix your own-using red wine vinegar and fresh olive oil!  Have a 2nd choice of a bottled dressing-as an alternative (Ex: ranch, french, italian*)

Chocolate Covered Strawberries

Prep Time: 10 minutes
Total Time: 10 minutes
Ingredients:

* 1 dozen ripe strawberries
* 1 cup semi-sweet chocolate chips

Preparation:

1. Prepare a baking sheet by lining it with aluminum foil.
2. Wash the strawberries and dry them thoroughly.
3. Place the chocolate chips in a microwave-safe bowl and microwave them until they melt, stirring every 45 seconds. It should take about 2 minutes.
4. Holding a strawberry by the stem, dip it in chocolate, twirling it in a circular motion to evenly cover most of the berry. As you lift it from the chocolate, twirl it so that any excess chocolate drips back into the bowl.
5. Place the berry on the prepared baking sheet and repeat with remaining berries and chocolate.
6. Once all of the berries are dipped, refrigerate them for 30 minutes to set the chocolate. These candies taste best when eaten the same day they are made.


IF you are SINGLE-double the recipes above-invite some friends over for a SUNDAY NIGHT-and hand out aprons and get BUSY in da kitchen!  This meal can be something for QUEENS ONLY-so invite your buds over for a feast!  Tell them to bring their FAV COMEDY to watch after you're stuffed!  GOOD food and good wine and good FRIENDS make for a good time-with or without a MAN around!  Make this a night of laughter and draw names at the end of the night-drop off cards and sweets the next day TO whose name you drew!  This is a surefire way to bond together with your female friends AND remember the TRUE meaning of LOVE - isn't limited to just couples!
