Eggplant Parmesan Delight!

YUMMY!! 

 

One large eggplant

Shredded mozzarella cheese

2-3 eggs

Bread Crumbs

Olive Oil

Favorite Spaghetti Sauce

 

Frying Pan

Baking Pan

 

Peel and slice the eggplant into ½ inch thick pieces

Crack and whip the egg in bowl large enough to dip the pieces of eggplant in.

Dip the eggplant in the egg and then into the breadcrumbs.

Fry lightly, the pieces in the olive oil (all of them)

Layer the eggplant pieces with sauce and mozzarella cheese. So you’ll have a layer of eggplant, sauce with sprinkled cheese; another layer of same, and a third layer of the same.

Bake for 35 minutes at 350 degrees.

 

This is great reheated as a left over, too!!!

A timely recipe for this delicious summer vegetable. The following from Recipezaar is tastes great, is easy to make  and is low in fat and calories:
Oven Fried Eggplant (Aubergine) Recipe

4 servings   35 min 10 min prep


     1/2 cup fat-free mayonnaise

     1 tablespoon minced onions

     1 lb unpeeled eggplants, sliced (about 12 1/2 inch slices)

     1/3 cup fine dry breadcrumbs

     1/3 cup grated parmesan cheese

     1/2 teaspoon dried Italian seasoning

     vegetable oil cooking spray


Heat oven to 425 degrees. Coat baking sheet with cooking spray.

Combine first 2 ingredients, stir well.

 Spread evenly over both sides of eggplant slices.

 Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl; dredge
 eggplant in breadcrumbs mixture.

 Place eggplant on a baking sheet coated with cooking spray.

 Bake@ 425 degrees for 12 minutes.

 Turn eggplant over; and bake an additional 12 minutes or until golden.

Dear Fawn:
This makes me remember my Mother.  She made this for us many years ago and we never forgot how good it was.  She made it like you and I think she learned to make it from our Italian neighbor who was always stuffing us with goodies from her kitchen.  I love eggplant and it is sooo good for you, thanks for another good blog.
